Sour Cream is a great addition to an assortment of recipes from tacos to casserole. With just a handful of cashews and seasonings, you can whip up vegan sour cream in no time. Let us know how you like this recipe!
EASY VEGAN SOUR CREAM
1/4 cup of raw cashews soaked at least 2 hours
Juice of 1/2 or 1 lemon.
1/8 cup water (start with less water and add more to get your desired texture. )
Himalayan salt to taste.
A sprinkle of Cumin optional
1 inch of Jalepeno or Serrano pepper optional- we love how this tastes!
Optional for marinara flavor 4 Sundried tomatoes, soaked in warm water for 10 minutes
Blend until smooth.
Serve immediately over taco salad or let sit in the fridge to thicken.
Life Span: about 1 week in the fridge.
